Roasted Carrots with Whipped Feta

A vegetable dish that doesn’t feel like a side. Multicolor carrots roasted until tender, layered over whipped feta, and finished simply. It’s about contrast, sweet and savory, soft and structured, without overcomplicating it.

Ingredients

1 lb carrots, peeled and trimmed

1 1/2 tbsp olive oil

Salt

Fresh cracked black pepper

4 oz feta cheese

1/2 cup Greek yogurt

1 tbsp olive oil

1 small garlic clove, grated

Fresh thyme or parsley (optional)

Lemon zest (optional)

Preheat oven to 425°F.

Method

Peel and trim carrots; slice thicker ones lengthwise.

Toss with olive oil, salt, and pepper.

Roast 20–25 minutes until caramelized.

Blend feta, yogurt, olive oil, and garlic until smooth.

Spread feta on plate. Layer carrots over feta.

Finish with olive oil and optional herbs.
